I love cooking with buffalo or Bison meat! It tastes amazing in so many recipes and due to its lack of fat, it cooks quicker than your typical red meat like cow meat. You can pair this with any veggie or grain you wish! Get creative! This is one of my favorite dishes because it’s super tasty and filling yet light.
Ingredients you’ll need:
- Ground Buffalo – 1 pound. You can find this pretty much anywhere now. I buy two-four packages and freeze them.
- Chick Peas – This is the only bean or legume I can eat without having stomach aches for days! You’ll need a whole can. rinse them.
- Red bell Pepper – Dice and add to the side
- Garlic – What’s a dinner recipe WITHOUT garlic??
- Diced Tomato– one can will do. I did add in 1/4 of a jar of pureed tomatoes as well.
- Cilantro- This is my favorite herb of all. I grab a BUNCH of this and toss in after I chop it and the recipe is almost cooked.
- Jasmine Rice– You can use quinoa or any other grain. We chose Jasmine. It’s light, fluffy and works amazing with this recipe
How to make:
- I use a rice cooker to make my grains. This is always the first step.It’s very simple, the ratio is 1 cup dry measured rice or grain with 1.5 cups water. Once you’ve put it in the rice cooker, put the lid on, turn it on, and when it’s done, it’s set to automatically switch to warm.
- Saute your garlic and red bell pepper in a tablespoon of olive oil. Once your garlic is a light golden brown and the bell pepper has softened up, you can add the ground buffalo. Break it up and mix well.
- Add in the spices you desire such a salt, pepper, garlic powder, cumin, and turmeric along with diced tomatoes and chickpeas. stir and mix well.
- lower heat, and simmer for about ten minutes. Serve over rice. My serving was 1/2 cup jasmine rice and 1.5 cups of the sauteed buffalo + chickpeas.

Sasha prefers each food group to be separate on her plate, whereas I would just mix it all together.
