I love ALL things pumpkin! You name it, I love it. Perhaps it’s because I know how insanely good pumpkin is for me and for you too! My Pumpkin Spice Overnight Oats are nutrient-dense, taste delicious, they’re so satiating and did I mention SUPER CLEAN? Uh-huh! Go on, keep reading girl!
WHEN I MAKE THESE OVERNIGHT OATS AND SPRINKLE ON THE PUMPKIN SPICE, OH MY! THE FALL FEELS ARE IN FULL EFFECT!
I love love love nothing more than a hot bowl of oatmeal on a cold winter morning, filled with apples or pears or pumpkin and even bananas. Ask anyone like my husband, and he will tell you how much I dread the winter, but the Fall, OH, I just love everything about it! The crisp weather is creeping up on us soon here in New York, but until then, I’ll be devouring my overnight oats! I have created so many versions, and yes, I will be sharing them all with you.

HOW TO SIMPLIFY YOUR WEEK
If you want a smoother week with the kids, you have to do some prep work. Usually, Sunday night after I read to Sasha, I am downstairs prepping breakfast for the next five days for both myself and Sasha. To me, one less thing to do in the morning leaves me calm, and happy. When I wake up, I can actually sip my coffee and read Sasha a book while she eats her breakfast. With breakfast already made, we won’t have to rush to eat, get dressed and rush to school. If you do ONE THING this week, just one, try this recipe or the other ones I will be sharing with you. Reserve a shelf in the fridge and get those Mason Jars or Pyrex containers stocked up and ready for you to grab in the am!
JUST SO YOU KNOWOvernight Oats made on Sunday night will last for about five days! Did you just read that? Uh-HUH! FIVE DAYS! Do you see where I am going with this? EASY PEASY MAMA! Do you have your Mason Jars? Oh, I love these Sturdy, stable thick jars for storing everything from Almond flour to Tomato Sauce! I prefer the wide mouth, so I can stir easier.
STEP ONE: Line Up your Jars

STEP TWO: Always Add your choice of liquid first. I used 1/2 cup Almond Milk.
Whatever liquid you use and however much you use, you will use the same amount of dry oats.

STEP THREE: 1/2 Cup Dry Old Fashioned Oats- I use Bob Red Mill’s Gluten-Free.
Don’t bother with the quick oats, as they tend to come out too runny

STEP FOUR: Add one scoop Protein Powder. YES, you NEED protein. NO, it doesn’t taste chalky.
Try this one! You can get Vanilla or Chocolate.
Both INSANELY delish

STEP FIVE: Add that Pumpkin Puree! 1/2 cup in each Mason Jar

The Can should say- Organic Pureed Pumpkin- THAT’S ALL! I use this kind
STEP SIX: Sprinkle in your desired spices!
I LOVE Pumpkin Spice, I love nutmeg, cardamom, and plain old cinnamon!
Seal the lid and shake that baby up! Pop it in the fridge and leave overnight.
In the morning, open and stir. PRESTO!


When I have time, I love to make my own homemade Paleo granola. Sometimes I will just grab a paleo granola like Paleonola from Whole Foods. Depends on my mood. If I am a procrastinator, I’ll buy it, but if I am feeling like Super Mom, I make my own!
