My First Ever Collard Green Wrapped Burger
The first time I had a burger wrapped in collard greens was when I took Sasha on a mommy-daughter lunch date to Bareburger. Looking over the menu, I was pleasantly surprised to see that they served bison meat. I would have been happy eating a burger on lettuce, but when I saw that they offer collard greens as a bun, I was excited! As I sat there eating this burger, I envisioned making this at home for myself and Mario. I knew he would love something like this.
What Are Collard Greens?

Collard greens are humongous green thick stiff leaves. While I wouldn’t recommend eating them raw, you could. These giant leaves are full of Vitamins A, C, K, fiber, calcium, and iron!

I also roasted veggies, including kabocha squash. I’ve never just cut it into thick chunks and roasted it, so I figured what the hell, why not. Sprayed my avocado cooking spray along with sea salt and rosemary. Mario loved it!

What’s in The Wrap?
I put hot sauce, avocado, mustard, and the buffalo burger in my wrap. I did the same for Mario. This is definitely going to be a staple in our house!
Doesn’t Have To Be Complicated!
Even if cooking isn’t your thing, but you want to eat healthier, grab a bunch of different veggies, toss them on a baking sheet, and roast away! As I always say…Doesn’thave to be complicated!
