
I don’t know about you, but once September is over, all I can think about are all things cozy, comforting, warm, and snuggly. It’s a time where I can live on all winter squash and hearty soups. This soup is one I’ve made for years, but only during the fall and winter. I am sweating by the time my bowl is empty. But, Yea, it’s warming, soothing, and filling! This soup is a recipe to keep on repeat all winter long. I bet the first time you make this soup, it won’t be your last. You too will have a soup to keep on repeat.
What I Love About Soup
I love soups, especially brothy soups, simply because they are low-calorie, filling, and on a cold night, they can warm your body from the inside out. Think about the last time you had a piping hot bowl of chicken noodle soup or, as I would eat, Chicken soup with a bit of white rice. How cozy and warm did it make your body? Of course, let’s not forget all of the fantastic nutrients that go into soups.

What’s In The Soup
For this soup, I’m using 94% fat-free Ground Organic Turkey. I don’t eat any red meat except for Ground Buffalo, so using Ground turkey for this soup is excellent because Mario and I love it. However, Sasha wants no part of THIS soup, as she prefers chicken noodle soup.
About Ground Turkey
Turkey has less saturated fat than red meat, fewer calories, and tastes so damn good! However, when buying your ground turkey, make sure you check the labels! Please DO NOT get the dark meat ground turkey, as it contains more fat. Also, make sure the turkey is organic! Anyway, if you’re looking for a healthier alternative to red meat, ground turkey is what I suggest. The other ingredients in this soup are shredded cabbage, zucchini, carrots, celery, white beans, bone broth, and diced tomatoes.
Get Ready To Get This Soup In Your Belly
IT WAS VERY BASIC when I first made this soup, as I just used cabbage, onions, broth, and ground turkey. However, having made this delicious recipe so many times, I experimented with different veggies. I finally figured out the veggies that we love to make this soup filling. Feeding my Hungry Italian is NO easy task! Before you begin to copy the ingredient list or head to the food store, remember that you can pretty much add whatever veggies you wish for this soup.
The Other Ingredients I used and Were to Find Them.
In Addition to all of the delicious veggies, You’ll need broth, white beans tomatoes and spices. These are the ingredients I always have in my house and the brands I prefer. Ground Turkey Cabbage Soup
Ingredients
- 2 lbs 94% lean Ground Turkey
- 3 Cups Diced tomatoes
- 1 14 oz Carton White Beans
- 8 Cups Organic Chicken broth
- 2 large Zucchini diced
- 7 large Carrots sliced thin
- 7 large Celery Sticks diced
- 4 Cups Coleslaw Cabbae shredded
- 1 large Onion diced
- 3-4 cloves Garlic diced
- Salt
- Black Pepper
- Dried oregano
- Paprika I LOVE SMOKED Paprika
- Hot Pepper Flakes For the Hungry Italian
Instructions
- In a soup pot, add 2 pounds ground turkey and chopped onion. Saute over medium high heat, chopping the turkey.
- Add garlic cloves minced garlic and all the spices. You’ll want to cook until you smell all of the spices.
- Add the chicken broth. Iused two cartons . Then I added another 2 cups of water.
- Once the broth is starting to boil, Add all the veggies, starting with the carrots. You’ll want to toss in the zucchini last, since it cooks so fast.Pour in your diced tomatoes. stir well. At this point you can add in the shredded cabbage. Stir well.
- Drain and rinse the can of beans and add to the pot. Once the soup comes to a boil, allow to simmer on low heat. Simmer until carrots are cooked, about twenty minutes. Now you can add in the zucchini!
- While this cooked, I had my rice maker cooking up some organic jasmine rice. When ready to serve, I spooned out 1/3 cup rice in my bowl and 1 full cup in Mario’s. I had about 3 cups of the soup and Mario had about 5 cups. It’s very brothy.
