
Mario sent me a text today with a picture of about fifteen bananas on our counter! Seriously! With the picture, his text said: “Time to make banana bread.” Not quite sure how so many bananas ended up on our counter, but I knew I had to make something! These Muffins are something to brag about!
I knew if I made “bread,” Sasha wouldn’t eat it. Turn it into a muffin, and presto! She devours it! These kids! These banana muffins came out insanely moist, addicting, and when Sasha loves them, I know they are delicious. She is so damn picky!
A Whole Foods Run!
I spend my time in three places. You can find me at work which is the gym I train my clients in, you can also find me at home most of the time, and I’d say maybe three times a week you can find me at Whole Foods. After work today, I headed to Whole Foods to grab some things for dinner. I also grabbed a whole chicken, and veggies to make little Mama (Sasha) chicken soup. She is already asking for it, and when she asks for something super healthy such as homemade chicken soup, this mama jumps!
One hour before school pick up!
When I walked in the door, the clock read 1:53. “I got this” is what I said to myself. My goal was to unpack the groceries, chop the squash for dinner tonight and also make two muffin tins of these paleo muffins. I tossed all of the ingredients into the blender,pre-heated the oven and while I was waiting for the oven, I sliced three honey nut squash along with some other squash so I can roast for dinner. Tossed them in a large mixing bowl and seasoned them up. Looking at the clock, it read 2:15. Once the first tray of muffins had cooked, I poured in the second batch and popped them in the oven. By this time, Mario had come home. It was 2:30, and I had to leave. He pulled the second batch out and couldn’t believe how amazing they were!
Banana Paleo Muffins
If you want a muffin without the muffin top, these are YOUR muffins! Adding protein powder to the mix makes them even better for you! A nice boost of protein keeps you fuller longer. I believe this recipe gives you a great balance of complex carbs, protein, and fat!
Please note: I don’t have the time to separate dry ingredients and wet ingredients. I tossed everything in my Vitamix, and these muffins came out insanely perfect! I’m the mom with the messy bun all day, sweaty workout clothes cramming it all in! Bare with me!
Ingredients
Makes 12 muffins
- 3 banana, mashed
- 3 large eggs
- 2 cups almond flour
- 2 scoops Nutra Bio Grass-fed protein
- 1/4 cup coconut oil
- 1 tsp baking soda
- stevia-I use liquid dropper (3 drops)
- 1 serving Lily’s vegan Chocolate chips
- Avocado oil (spray) to coat the muffin tins
Instructions
- Preheat oven at 350F.
- Add all ingredients to a blender or Vitamix
- Spray muffin tins with avocado or coconut oil cooking spray
- Bake for 30 minutes. Use the tip of a knife, if it comes out clean then it’s cooked!
