I don’t know about you, but I’m the chick who can’t function in the morning without food in my belly! I’m a creature of habit, I guess. I’m going to share three of my favorite breakfast recipes with you. These recipes are easy, packed with protein and will keep you satiated for your entire morning!
Protein Pancake for one!

This love affair for protein pancakes started right after I had Sasha. I experimented with protein powder, egg whites and a banana one day, and that was it. I was hooked. There are so many ways I make them, here is one way. Feel free to use whatever flavor protein you have.
- 3 eggwhites
- 1 scoop Grass-Fed Protein Powder- Nutra Bio is my absolute favorite.
- 1 banana
- 1/4 cup oat bran
- cinnamon
- 1/4 Cup non-dairy Yogurt
- Fresh organic berries
To make it more simple and quick, I toss all ingredients in the blender. Using the blender also fluffs it up without using baking powder.
In a large frying pan, spray cooking spray. There are two cooking sprays I use. This one and this one. Once your pan is hot, pour the batter on the pan to make one giant pancake. Cook on medium heat for about 5 minutes. Once you see it bubbling, grab a plate. place it over the pan and flip it. Slide back onto the pan and scrape off the batter left on the plate. Cook for 3 minutes this side. Flip once more for a minute or so.
On your plate, spoon 1/4 cup Non-Dairy Yogurt. I use So Delicious Key Lime Pie or Kite Hills Key Lime Pie yogurts. Toss a few fresh organic blueberries and your good to go! You can use any yogurt you choose. I’m a non-dairy mama.

Overnight Buckwheat Groats
Buckwheat Oats is my second favorite breakfast! Let me fill you in on a little secret. Okay, here’s the thing. You want to eat foods that satiate you, right? Foods that give you lasting energy. Foods that have fiber to keep you regular. When comparing Buckwheat Groats to Oatmeal, Buckwheat groats wins! An entire cup of cooked Buckwheat groats has only 155 calories, 34 grams of carbs and 5.7 grams of protein and fiber is a whopping 4.5 grams!
- 4 cups water
- 2 cups dry Buckwheat Groats
- cinnamon
Buckwheat groats are easy to make. You simply measure two cups dry buckwheat groats and 4 cups water and the cinnamon. I used my Le Creuset which is my absolute favorite to cook with.
Once it starts to boil, simmer on low for 3-5 minutes. keep covered at the turn off the heat. While mine sat on the stove, I was able to read to Sasha, and hang a little. The longer it sits, the softer it will be. When I came down, I was pleasantly surprised by the texture. Smooth like oats, yet a nutty like texture. Then I got out my Mason Jars!
- Almond Milk – In each Mason Jar, start with 1/2 cup
- Buckwheat Groats– Scoop out 1 cup cooked Buckwheat Groats into each Mason Jar
- Protein Powder– In each Mason Jar- add 1 scoop
- Berries- Make sure they are organic! just a handful
- Nut Butter of your choice- 1 tsp. I like Whole Foods Organic creamy almond butter
In the order above, add your ingredients. Mix slowly and carefully. Once you’re done. Cap them and toss them in the fridge! This makes 5 Mason Jars, so you just made 5 days worth of breakfast! It’s a WIN-WIN!

Paleo Waffles with Figs Banana and Bee Pollen
On days when I am exhausted, feeling lazy or just want something super easy, this is the way I go! They are amazing! I love the brand Birch Benders. They aren’t loaded with junk! with 5 or 6 ingredients you can pronounce, You won’t feel guilty, bloated or yucky after you eat them! I love to top mine with figs if they are in season and a few slices of banana. FOr an extra boost of health benefits and energy, I will sprinkle Bee Pollen on top!
